Arugula has the unfortunate reputation for being a vegetable enjoyed only by snobs. If there is any truth to this at all, I must count myself among the snobbiest. I often wonder, though, how supporting a farmer who puts a seed in the ground to grow something so green, peppery, and delicious can be considered snobby. So set aside your fear of being labeled a snob and try it. You may discover that being a “food snob” isn’t really so bad.
